What counts as a category segment?
Each uninterrupted period spent in one Twitch category is a separate segment. Returning to that category later creates another segment.
Are these unique viewers?
No. Average and peak figures are estimates based on concurrent viewer snapshots, which is stated clearly in every report.

The latest completed stream breakdown is available to Free creators. Pro adds longer periods and historical stream reports.
